I made this with cabbage AND some fennel as I’ve roasted that combo before. Wonderful with the bacon gremolata!
I was also inspired to buy the cookbook – hardcover, even! It is beautiful – photos are gorgeous, many recipes I want to try and wonderful stories.
So glad you liked the recipe and are enjoying the book! Fennel in the mix sounds amazing. I’ve been putting that gremolata on EVERYTHING, by the way. My current favorite is sprinkling it over my (boring) lunch salads — instant upgrade.
Has anyone tried this with red cabbage? I have a half head left over from coleslaw recipe.

I love cabbage and your recipe sounds delicious. I usually cook it with butter in a pan on low heat until it is very tender.
