    This is great! And so easy! I also added in about a teaspoon of minced garlic and about a tablespoon of chopped red bell pepper with the onions I had laying around. Delicious!!

    This tastes GREAT. I am lactose intolerant, so I threw some nutritional yeast into the eggs for a cheesier taste. As I had a cut jalepeño on my cutting board already, I minced up a bit of that instead of the other pepper. This made enough for a great breakfast today and one for another day when I don’t have so much time.

    Simple, quick, and easy. I was skeptical of it tasting good without some sort of breakfast meat (I love my bacon and eggs), but it was delicious. Critical to season well, otherwise I could see it being less-than-satisfying.
