Can you substitute anything for the thyme? It’s my least favourite herb!
Hi TC, you could use finely chopped chives, or perhaps a little bit of fresh chopped oregano. Or you could just skip the thyme entirely.
I love it! I get requests for this salad for family gatherings! I put in spinach, arugula, celery, microgreens….whatever I feel! Delicious every time!

This is easy and absolutely delicious. Oh, and healthy, too! It is best with shaved parmesano reggiano but we ran out and I had to use grated romano which was pretty good as well but the reggiano makes it an outstanding salad. Thank you for the recipe.

This is one of my favorite salads. I like to add shaved radishes, just because I love them. I make this salad often, it’s so great.
Try some sweet citrus in there for a real treat, swap olive for walnut oil… wow
I make almost the same salad, but I add chive blossoms when in season. I break a few up into the salad and then garnish with two or three more.
The light purple colour is fantastic.
This recipe works best if small whole skinless almonds and waterkress are added.
