    This dish was delicious. I wanted to use some of my garden tomatoes so the end product wasn’t as beautiful but my mouth didn’t care. It felt like a deconstructed carbonara. The best part was I got my husband involved in cooking, and now I can say he has mastered poaching eggs. Win – win for all of us!

    Made this with “low fat bacon” (jambon Iberico in hot olive oil) with halved cherry tomatoes. Yet another great recipe from to add to the “Recipe Hall of Fame” in our house.

    This recipe breaks one of my cardinal rules for a meal: no more than 2 pots/pans. I’m going to have to ignore my rule and try this. It looks delicious.

    I often add a sliced zucchini. :)

    And since I’m lazy I drop the unpeeled egg into the pasta water and wait until the egg whites are slightly firm and the yolk raw-ish. Peel the egg, drop the yolk onto the ready pasta, mix. :)
