This was the quickest/easiest pie I could find in a time crunch. With limited ingredients, I was skeptical. But now I am making my third one, it is delicious! And you can’t beat how easy it is (especially with store bought crust).
The only thing I would say, is add 1/2-1 cup more fruit if you don’t want a flat pie.

I’m going to be making this tomorrow. I’ve always loved strawberry/rhubarb pie but in my 61 years still have not made one. Just to be clear, you DO NOT cook the rhubarb first. I rarely fail in the kitchen and because I have such awesome strawberries to use, I do not want to mess up.

Are these pies freezable for later use in the year? If I substitute cornstarch instead of the instant tapioca, are the ingredient cornstarch equal to the same measurement as the tapioca? Need reply as soon as possible. Thank you
Hi, Cecellia! We didn’t test freezing the pie for this recipe, so I’m not sure how they would turn out. I can tell you my mother-in-law routinely freezes double crust rhubarb pies, and it does work. If you want to experiment and try this, freeze the pie raw and bake it from frozen. You will need to add extra time to bake it. I would not bake the pie, then freeze the baked baked pie. I would not use cornstarch to thicken this pie. Strawberries are acidic which can reduce the efficacy of certain thickening agents. Also, both rhubarb and strawberries are low in pectin, which means they require a sturdier thickening agent. I would stick with tapioca as the best thickener for this pie.

I made this pie and it is a very good pie. I’m a purist when it comes to rhubarb and never add strawberries. This is good but I like no strawberries better.
I made the recipe exactly as stated (including the crust) and it was delicious! I’ve never made strawberry rhubarb before and I was surprised by how much I loved the flavor. Can’t wait to make it again while rhubarb is in season!
This pie is amazing. Great texture, flavor and taste. The dough was a bit hard to work with (sour cream makes it a bit moist), but it was worth the effort. The resulting crust held the filling well and baked up beautifully. Another win for Simply Recipes! PS – Use really ripe, wonderful strawberries, preferably from a farmer’s market and not those plastic things they sell in the grocery store. Flavor is key here and the only way to get great strawberry flavor is with great strawberries.
So good! I did cheat and use store-bought crust, but made the filling as directed and it was fabulous. I went with lower amount of sugar and it was the perfect amount of tartness. Pie needs to cool completely to not be runny, but then is just right, not to jelly-like either. Thank you!
This is a stupid question but…do u add less sugar if u want it tart?
Yes, less sugar will mean more tart, she just used the lower amount suggested in the recipe.

Yes this is my first time making this Strawberry Rhubarb Pie. I’ve haven’t tasted it yet I’m still baking my pie still but it looks delicious and yummy! I’m waiting patiently for the pie to get done.
