So I was skeptical bc I don’t love sweet potato fries… but I made these bc I had a sweet potato I needed to get rid of…I followed the recipe and I loved them!

Good recipe for us who are on a paleo lifestyle. This will be a regular in my breakfast routine.
If you don’t love the idea of adding an egg as I binder I added about a tablespoon of corn starch to the shredded potatoes (as well as seasonings: garlic powder and cayenne pepper salt and black pepper) it helped keep anything from falling apart and made it really crispy on the outside.
there’s no mention of using egg as a binder in this recipe. I didn’t need it, just dry the shredded before frying.
I used food processor and added garlic power and one egg. Sticks together in patties well
Batch 1 was the regular recipe.. delicious but did not hold together, batch 2 used the egg and coconut oil.. makes a nice patty.. I had shredded 4 little potatoes so batch 3 was butter and dumped the rest in the pan.. so while batch 2 makes a nice patty, the original recipe is absolutely delicious and it doesn’t matter that it is a nice patty!
I have been making sweet potato hash browns for awhile. I do not use butter. I make them extra healthy by using non-flavored coconut oil (like LouAna’s). I think they come out even crispier this way.
And I use the peels and all for a triple punch of healthiness and goodness.
oh, and I mix it up depending on my mood and add a pinch of salt, pepper, garlic powder, chili power or cayenne pepper and sometimes parm cheese. You can literally add any seasonings that you like.
No egg binder needed nor do you need to drain any water out. You do need to watch them carefully and experiment because they can burn due to the natural sugar in sweet potatoes.
LouAna’s in a refined Coconut oil and not healthy. It’s best to use Extra Virgin Coconut oil.
Amazingly my hash browns did not fall apart. I grated it, compressed it, placed it in the cast iron pan with all that bubbly butter and voila I was able to flip it without a hitch. Thank you so much for the recipe :)
This is a good recipe although when I was cooking it it just fell apart…. So I decided to put an egg in it and it came out perfect… So put in an egg while your making this so it doesn’t fall apart. I also served it with a bed of spinach an egg and avocado! It was beautiful I advise people to try it!!!
Nice idea, doesn’t work. They don’t stay together at all and too much moisture to brown or crisp
Can these be made in a 9″x13″ pan in the oven? What temp?
Hi Lori, this recipe is a stove-top recipe. I don’t know how I would make these in the oven. I’ve only made hash browns (potatoes too) on the stovetop.
This is a very easy and simple recipe. I’m looking for recipes to help lower/control my blood-sugar. I’m a hashbrown addict and using sweet potato should help curb my addiction and keep my A1C under control; I hope. I think I’ll add some cinnamon and possibly nutmeg next time.

LOVE THIS!!!!! It’s Thanksgiving 2015, just two of us and hubs LOVES sweet potatoes!!! Me, not so much, but this is JUST PERFECT!!!! I could even put a little brown sugar or mini mallows atop his!!! Thanks
I did this recipe except with sugar n cinnamon instead of salt and let me tell you!!! Your husband ain’t going nowhere sweetie!!!! You don’t have to make patties just let some of it get brown and toss it around then add some yogurt and some nuts to top it off maybe some fruit!!!
I failed at making these. Tried for over an hour, high heat, lots of butter, they fell apart and never seemed to cook evenly.

Wow this is a delicious alternative to my regular hash brown. Sweet potato is also healthier so you know its good. This is something I will make in my own kitchen.
