Is there a good substitute I could use for the cilantro? My husband would love everything about this recipe except he has a hatred for cilantro…
Hi MJ, sure! Try chopped up baby arugula instead of the cilantro. I like adding it to my tacos so I think its pepperiness should work well here.
Love this recipe made with either turkey or chicken. I added in a can of Rotel with veggies and seve with chopped avocados
I made this and it did not hold together at all and does not look at all like the picture. The cheese disappeared into the quinoa. I followed the recipe pretty much, except I added extra quinoa. But even with the extra quinoa, it tasted pretty cheesy. I might as well have just stirred everything together on the stove top instead of taking the extra step to bake it if it was just going to fall apart. It was tasty, but I do not think I will bother baking next time.
Do you need to rinse quinoa? I have never fixed it.
Depends on the brand. Check the box and if it says to rinse it, then you need to rinse it.
I made this tonight with taco seasoning. So good!
Sounds delicious. We cannot get black beans in France, believe me, I have looked. I am going to try it with white beans. Will let you know how it turns out.

I was just going to ask the same question about the oven temp. I figured it was 350°. (I just copied and pasted your temp above, since I don’t know how to get the degree symbol without looking it up. :) )
I just finished making this for a potluck tonight. I added a few things to stretch it, and because I had them handy. I diced some zucchini, and had a couple of overripe tomatoes that made their way in too. Also had about a third of a can left of chicken broth in the fridge, so that went in as well. It tastes very good already, just all mixed together in a bowl, before topping with cheese and baking. Thanks for another easy, tasty, good looking recipe. :)
