Trying to make a buttercream version of this… will white chocolate chips work?
I’ve had trouble making ganaches and frostings like this using white chocolate chips, as their formulas vary a lot and behave unpredictably. I’m not sure that vegan white chocolate chips would work here. I think you’d be best off using our Easy Vanilla Buttercream Frosting, subbing something like Earth Balance for the butter and a good, right non-dairy milk for the cream (I’m really into Chobani Extra Rich Oat Milk these days). Hope that helps!
Any ideas on if this would work with oat milk?
You could use oat milk, but keep in mind canned coconut milk has a lot more fat than oat milk, so it’s not going to taste as rich.
Can chocolate chips be replaced by cocoa powder? What would be the measurements? Thanks (I need to cook for a person who is allergic to dairy).
What I’d do is use the cocoa powder frosting from this recipe, but swap Earth Balance for the butter.
My younger son is allergic to most nuts, dairy, soy, etc. This recipe is perfect for us. I’ve made it twice and it was perfect. Thank you!!!

Is it 2 cups of morsels or 10 oz?
Hi Stephanie, thanks for your question. When you see an ingredient listed like 2 cups (10 ounces) it’s typically giving you two ways to measure the ingredients. Sometimes, as in the case with morsels, it’s helpful to know how many ounces those cups equal so when you’re shopping you know what size bag to buy. Also, in baking, it’s usually more precise to weigh the ingredients. Hope that helps!
Coconut milk is the canned (with a chunk of fat) or boxed (liquid) type?
