Tried it last night. Brought some to work today – it was a total hit. I didn’t add jalapeno poppers, but hot cayenne sauce (about 1/4 of a cup). Tasted good.
Made this today and we enjoyed it as an appetizer before dinner. Fabulous. Can’t wait to try it tomorrow after it has had a chance to “steep.” I omitted the jalapeño and used basil instead of cilantro to suit our taste.

This is now our go-to gazpacho. It’s a little unusual, but so flavorful. My husband grilled the watermelon slices until they had some light grill marks. then he cut the pieces into chunks and proceeded with the recipe. We’ve made it many times this summer. Our last batch is chilling in the fridge as we speak.Thank you for the recipe. As always, your recipes are so reliable and so tasty.
I’ve made this three times this long summer! Love it and always get raves! My blender is puny so I have to do lots of batches and always put some of the watermelon juice in to get everything running. Thanks very much.

Totally delicious! I didn’t realize I had to chill it for an hour until I got to the end of the recipe, we had a late dinner. Oops! Elise, maybe you want to put “chilling time” at the top next to “prep time” so others don’t make that mistake?

I was looking for a gazpacho soup recipe & came across your watermelon gazpacho recipe. There’s great sale on large watermelons, thought this would be great way to use part of it.
My only concern I have is that you have to finely chop part of the vegetables. I have a very difficult time finely chopping anything.
Will it mess up the soup if I put everything in the blender?
Hi, Sandy! Emma here, managing editor. The finely chopped vegetables get added at the end in order to give the soup more body and texture, but you can definitely blend everything all together. This will give you a thinner soup. Enjoy!
