READER QUESTION: What is the best oil for deep frying? 

When deep-frying foods, it’s best to go with a relatively low-cost oil that has a relatively high smoke point. “Low cost” because you typically need several cups of it, and high smoke point just in case the temperature of the oil spikes between batches.

For most of our deep-frying projects here at Simply Recipes, we recommend peanut oil.

    While I always use peanut oil for frying turkey & ducks (which takes 3 gallons of oil, not a few cups), as I think it imparts the best taste, it is hardly the least expensive choice. In fact, I thonk peanut oil is more expensive than safflower or soybean or any other choice of frying oil n
